Combine 1 pkg dry yeast with 2 c very warm water, 2 tbsp sugar, 2 tsp salt and 2 c white flour. Beat until smooth. Cover bowl and set aside till the mixture is light and bubbly, about 1 hour.
Add 1/2 c honey or syrup, 1/2 c hot water, 1 cap maple flavoring, 4 tbsp oil. Mix well.
Now stir in 1 1/2 c flour and 2 1/2 c whole wheat flour. Mix until xmooth. Turno nto floured surface. Knead smooth (work in additional whole wheat flour if needed--use white flouro n surface) about 10 minutes. The danger in underkneading, not overkneading. Place a greased bowl. Turn to greased surface. Cover and let rise in warm place unti double, aobut 1 hour. Divide into 2.
Knead down. Toll to 10x14 inch rectangle. Roll up to make a roll to fit your pan. Turn the end under and seal. Place in 2 lightly greased loaf pans. Cover and let double in bulk. Bke in 375 degree oven about 50 minutes.
